Edible Game Day Snack Cups
A snack cup made of snack mix that’s also a snack? These may win the clever award at your big game day party. And as a bonus, you’ll have fewer dishes to wash. (Although you may have a few more crumbs.)
Fill these little, edible cups with dips, chips, veggies, berries or any of your favorite snacks. Kids will get a kick out of eating both the snack and the cup.
You will need:
1 bag of Chex Mix (8.75 ounces, or, 4 cups)
1 egg white
1 tablespoon water
Cupcake tin
Cooking spray
Preheat the oven to 325º F. Generously spray a 12-cup muffin tin and set aside. In the bowl of a standing mixer fitted with a wire whip, or in a bowl using a hand mixer, whip the egg white and water on high until the mixture becomes very foamy, like snow, and stiff peaks form. Stir in the Chex Mix and fold until the snack mix is evenly coated. Divide the mixture into the 12 cups.
With the back of a spoon, make a well in each cup, pushing the snack mix up along the sides of each cup.
Bake until well set and golden, about 25 minutes. Remove the tin from the oven and let cool completely, about 1 hour. When cool, gently remove the snack cups. (You may lose some bits here and there.) Fill with dips, veggies, treats or snacks and serve. Makes 12.
