Pancake Cones
Now here’s a fun way to make pancakes portable and fit to enjoy any time of the day: Turn them into cones. Fill your pancake cones with any of the kids’ favorites, either sweet or savory, such as fruit, yogurt, Kix, whipped cream, even ham and cheese.
To make pancake cones
You will need:
Parchment paper
Scissors
Bisquick® pancake mix
Fillings (fruit, yogurt, whipped cream, Kix Cereal or any other favorites)
Cut pieces of parchment paper in 6-inch squares. Roll into cones and pinch and twist the tip of the cone to hold in place. If you like, wrap the tip with a piece of tape to secure.
Prepare pancake mix according to package directions. To make the batter spread more easily, you can add 2 teaspoons of milk or water. Heat and grease a skillet, according to the directions. Pour ¼ cup batter on the skillet and spread to form a 6-inch circle. TIP: As you’re pouring the pancake batter on the skillet, rather than pour a lump in the center, pour in the shape of the circle, starting with the outside and ending in the middle. That way, your pancake will be a little thinner. Finish cooking all the pancakes according to the directions and set aside on a wire rack to cool.
Gently fold a pancake into a cone and place in a parchment cone. Fill with fruit, yogurt, cereal, whipped cream or any desired fillings. The cones shown here are filled with strawberries and blueberries and topped with whipped cream and Kix cereal.
