Cinco de Mayo Fruity Breakfast Burritos

Kix Cinco de Mayo Breakfast Burrito

Cinco de Mayo, or the 5th of May, commemorates the Mexican army’s victory over France at the Battle of Puebla in 1862 during the Franco-Mexican War. The holiday is super popular in the United States, and it serves as a chance to celebrate Mexican culture and traditions. Burritos are a staple of Mexican-American cuisine. These are a bit sweeter than the originals.

To make Cinco de Mayo Fruity Breakfast Burritos:

You will need:

Tortillas (flour tortillas used here)
Vanilla yogurt (or any preferred flavor)
Strawberries
Kiwi
Kix cereal

Pare and slice the kiwis. Hull and slice strawberries, and set the fruit aside. Heat a tortilla between two damp paper towels in the microwave for 10 seconds, just until the tortilla is flexible and slightly warm. Spread a tablespoon or two of yogurt on the tortilla. Top with sliced kiwi and then with sliced strawberries.

Arrange strawberries, kiwi and Kix on a warm tortilla

Sprinkle Kix cereal along the sides of the fruit so it sticks to the yogurt. Wrap the tortilla closed. TIP: You can use a nut or seed butter in place of the yogurt. Or, sprinkle additional nuts, flax or chia seeds or any of your favorites on the fruit if you like.
